The Parade food outlet opens with a new look this week, as the Nourish concept launches on 26 September.

The Nourish menu has been developed alongside the Centre for Nutrition, Exercise & Metabolism (CNEM) from the University's Department for Health.

The new menu focuses on healthy eating, with the benefits of many dishes supported by research from the centre.

At Nourish, you can enjoy:

  • A menu of global inspired hot dishes, including:
    • chicken Makhani
    • pork polpette
    • Mexican chicken mole
  • Poke bowls:
    • miso aubergine
    • sticky tofu
    • spicy tuna
    • bang bang chicken
  • Smoothies
  • Khobez wraps, with chargrilled vegetables and feta or Katsu chicken
  • Hot drinks and cakes

"As we explored launching a new food outlet centred around a healthy menu, partnering with the CNEM from the Department for Health was an obvious choice," says Kevin McCormick, Head of Commercial Operations for Campus Services. "They've given us some fascinating insight into how the ingredients we use can contribute towards a healthy, balanced diet and lifestyle."

“It was a real pleasure for CNEM to work with the Campus Services team by bringing our nutrition science expertise to help resign the new Nourish menus. This was a great opportunity for the campus food outlets to develop evidence-based menus for healthy eating and to help communicate accurate nutrition information to customers, whilst providing a positive way for our research to have impact locally,” says James Betts, Professor of Metabolic Physiology at CNEM, Department for Health.
